1)What is Michelin stars?
The Michelin stars is awarded by the Michelin Guide,which is a series of annual guide books published by Michelin for over a dozen countries. And it is a system of symbols to identify the best hotels and restaurants within each comfort and price category. For restaurants, Michelin stars are based on five criteria:
The quality of the product
The mastery of flavor and cooking
The "personality" of the cuisine
The value for the money
The consistency between visits
Michelin stars are awarded to restaurants offering the finest cooking, regardless of cuisine style. Stars represent only what is on the plate. They do not take into consideration interior decoration, service quality or table settings.
2)Explain Michelin star's role in hospitality industry.
Nowadays, with the remarkable development of hospitality industry, people have higher demand for restaurants. When a customer chooses a restaurant, he/she would pursue not only the flavor, service, and environment of the restaurant, but also the reputation of the restaurant. Namely, the level of restaurants is an essential element for customers to consider whether the restaurants are worth going to. So how can people know which restaurant is the best? People do need an assessment to evaluate restaurants. Michelin star is exactly such an authoritative assessment that gives people criteria to confirm the most acceptable restaurant to have a meal.
The initial Michelin star restaurants were established in France. Since then, Michelin star ranting system has been utilized widely by other countries such as Austria, Netherlands, Belgium/Luxembourg, Italy, Germany, Spain/Portugal, Switzerland, the UK/Ireland, Japan and U.S. For China, the Michelin Guide for Hong Kong and Macau was published on 5 December 2008. In consequence, there are a large number of Michelin star restaurants in the world. To a considerable degree, the influence of Michelin star will become more and more widespread and global in hospitality industry.
3)If you are a general manager of a five star hotel, will you apply the Michelin star for your hotel or the qualified restaurant within your hotel? Please explain.
Wether we will apply this system depends on the location of our hotel.
If our hotel is located in Europ of course we will apply the Michelin star , beacause as we our know , it is accepted by the Eurpean and it’s the most authoritative.
This system may give high pressure to chefs ,and may kill the chefs' creation because they may concern about the inspectors' flavor.It's also a big hit when the restaurant is degraded.
